This week, I was glad to receve the visit of Emma et Jordan, the american couple that I met in the colombian jungle, in Minca. Jordan is cook, and he offers us an easy and delicious recipe. (Translation at the bottom).
The crunchy-melty eggplant, in Jordan way
1/ Cut an eggplant in big pieces and peel it.
2/ Prepare three bowls (proportion depends of what you like):
- flour, salt and pepper;
- three eggs and a bit of milk;
- bread-crumb, thyme, rosemary and parmesan.
3/ With an elegant and safe mouvement, dip the eggplant pieces in every bowl. Cover every part of it.
4/ In a stove, fried it with sunflower oil, until every part is colorful
5/ Put it in a oven twenty minutes, until the heart is melty (try it with a knife).
6/ Serve it in a plate with fresh vegetables (salad, tomate) and vinaigrette.
