The fifth and final stop, the Maison de l’oasis, is a magnificent adobe residence, topped with a Bedouin tent, in the heart of the Tighmert palm grove.
Two small earthen ovens, similar to blocks of sand split in the center, were installed at the bottom of the garden. Fatima uses them to prepare megdel bread for breakfast. She crushes the balls of pasta on the inside wall of the oven, dipping her hands in water so as not to burn herself.
This morning, she still burned a little. I pointed this out to a man passing by and he replied, No, no, don’t worry, she’s used to it. Immediately, Fatima's gaze meets mine, and at the same time we roll our eyes to the sky. I have never eaten bread as good as this megdel bread, warm, crispy and tender, just out of the oven. According to Fatima, translated by Aziz, megdel bread is good because it is cooked on the earth, and the earth breathes.
