Let's go to the chaï shops ! Everywhere in the country, you can find those small shops that sell the delicious spice tea. Hashim likes the one crossing Canal Street. "The boss is nice and he puts more ginger than the others".
 
The boss is called Balu. He has been preparing chai here for 20 years, probably in the same pot.
 
"I'm here almost every day, but yesterday we went on strike! The region has started a lot of work, so taxes are rising. Transport first, but especially the price of gas. We have to change our rates, but we lose our customers. In 2008, a chai was worth 2 rupees, now it's worth 10 ! The great restaurants of White Town are not too affected: they are rich, they will hold up. But we are struggling to keep up."
